The roasting unit operation is part of the post-harvest processing of cocoa, which is carried out at high temperautres in the industry in general. This research aims to determine the effect of roasting (70 and 80 °C) under vacuum (20 kPa) on the titratable acidity, pH, antioxidant capacity, percentage of moisture and color and whiteness index of Chuncho genotype cocoa beans, and then, compare these treatments with roasting at atmospheric pressure (100 kPa) and at the same temperatures. It was statistically determined that the pressures and temperatures tested do have a significant effect (p<0.05) on the titratable acidity and the moisture percentage. However, on the pH and antioxidant capacity, they do not have a significant effect (p<0.05). In the case of the whiteness index, only temperature exerts a significant effect (p<0.05). Finally, further research is recommended using vacuum roasting at other temperatures and pressures and including various other variables such as time, roaster type, and fermentation rate.
