Ionic Gelification (GI) is an encapsulating method that protects AcPlukenetia and AcMauritia rich in monounsaturated and polyunsaturated fatty acids, which are susceptible to oxidation during its processing, storage or manipulation, so maintaining their nutritional characteristics remains a challenge. The objective of this work was to extract and characterize AcPlukenetia and AcMauritia, also, produce microparticles by GI and additionally to evaluate the oxidative stability of the encapsulated oils. Pectin emulsions (2% m/m) containing the oils were atomized in SCAL (2% m/m) to produce Pectin (Pc) microparticles, the same ones that were coated with gelatin of Maiden fish skin (Gpd) at different concentrations (2, 4 and 8%), for subsequently the uncoated microparticles and those coated with the highest concentration will be subjected to 45, 55 and 65 °C temperature for 1, 3 and 5 hours, to evaluate the production of peroxides. High efficiency of encapsulation in Pc microparticles was observed regardless of the type of oil used, with the efficiency values of 78.32% for AcPlukenetia and 82.54% for AcMauritia. The amounts of protein adsorbed on the surface of the microparticles showed efficient values of adsorption the greater the increase of protein in solution, obtaining up to 71.11% for microparticles containing AcMauritia and 69.66% for microparticles containing AcPlukenetia. Regarding the evaluation of oxidative stability, the encapsulated oils showed higher peroxide production when heating time and temperature were higher, obtaining significant differences (P<0.05) between 45 and 65 ºC in coated and uncoated microparticles, in both oils The results show that microparticles coated with Gpd have greater protection against lipid oxidation compared to uncoated microparticles. Therefore, the encapsulation of AcPlukenetia and AcMauritia is a technological alternative to protect and conserve oils against adverse conditions that produce their oxidation, reducing reactions with the external environment, facilitating their handling.
