The objective of the research was to determine how are the eating habits of the students of the 4th, 5th and 6th grade of elementary school at the San Francisco Solano de Comas school. The quantitative approach was used, of the applied type, with a non- experimental, longitudinal panel design. The sample was made up of 20 students. To collect and organize the information, a registration form and a tegorization rubric wereused. The results show that 35% of the students present adequate eating habits; Therefore, 65% have inappropriate eating habits considering regular and high level.The consumption of sugary drinks is from regular to high in 35% and the consumption of fats from processed foods is from regular to high in 20%; however, the frequency of consumption of these foods is high in 65%. According to these research results, as a first recommendation, a proposal for an inclusive gastronomic workshop lasting one month was developed, aimed at parents so that they can learn to prepare healthy lunch boxes using culinary techniques and thus improve eating habits of their children. Another recommendation to innovate and manage training from a gastronomic approach and the last recommendation to manage an entrepreneurial project based on a value proposition with our star product "chocolate muffin".
