The objective of this research work is to produce Pleurotus ostreatus edible mushrooms by using organic matter that is discarded every day. The objective was to determine the influence of corn cob, cane bagasse and ichu substrates in the production of edible mushrooms (Pleurotus ostreatus) in the town of Chaclacayo. According to the reports found in the investigation, the consumption of edible mushrooms is very frequent today as in history, its origin and its distribution. Sánchez (2015) mentions that the production of mushrooms is an excellent opportunity to use organic and sustainable waste, because obtaining protein has a positive impact on food safety and its medicinal properties, due to its low content of sugars and fat. For this reason, in Peru, there is evidence of its consumption of mushrooms (oyster). The results of this research show the importance of production and, at the same time, collaborate with the fight against chronic malnutrition, reaching a conclusion that the best organic matter was corn cob.
