The study focuses on the implementation of whole-genome sequencing of the yeast Saccharomyces cerevisiae in the brewing industries with the aim of optimizing ethanol production. Through an exhaustive literature review, key genes associated with ethanol production, such as ADH1, ADH2, PDC1, and HXT1, were identified, along with technologies like CRISPR-Cas9 and genome shuffling for modifying and identifying these genes. The importance of conducting additional studies to validate the identified genetic variations and understand their real impact on ethanol production was highlighted. The need to consider external factors influencing alcoholic fermentation, such as substrate composition and the presence of microbial contaminants, was emphasized. In conclusion, whole-genome sequencing is presented as a promising technique for developing improved yeast strains and optimizing ethanol production in the brewing industry. By compiling data from 11 relevant studies from various geographic locations, a global view of the current state of research in this field is provided. The need to expand studies to ensure the validity and applicability of the results, as well as the importance of addressing a broader range of variables in optimizing ethanol production, is highlighted.
