This professional proficiency project was developed using data and information from the line of chili paste of a company dedicated to food production and contract manufacturing, located in the Surco district, part of the province of Lima, Peru. The company in question identified an issue with color changes in the production of yellow chili paste during periods of high demand. One of the identified causes was the excessive storage time of cut and deseeded raw materials for more than 48 hours before the blanching stage, leading to visible discoloration during the grinding stage. The objective of this work is to propose methodologies and strategies to prevent or control enzymatic and non-enzymatic browning in the production of yellow chili paste. The methodology used was modified in two stages: blanching and cooking. The blanching temperature was varied from 85°C to 95°C, with a reduction in exposure time from 5 to 3 minutes. Regarding the cooking stage, there was a reduction from 15 to 10 minutes. As a result, a modified production with an acceptable color and physicochemical values within the established parameters for yellow chili paste was achieved. In conclusion, the modified methodology significantly reduced the initial enzymatic browning, as confirmed by physicochemical values analyzed in the company's quality control laboratory, ensuring the safety of the final product and customer satisfaction.
