The general objective of the study was to describe sanitary indicators of trout farming, in rainbow trout production centers in the department of Apurímac; for which surveys were applied to 30 producers, who were beneficiaries of the National Program for Innovation in Fisheries and Aquaculture (PNIPA) between 2019 and 2022; These producers have, among other characteristics, legal status (companies or associations of producers), commercial production of rainbow trout and experience in the activity. The survey was designed to obtain information on rearing conditions (type and level of production), productive parameters, sanitary characteristics, and market. For the validation of the questionnaire, a file was prepared, with the purpose of evaluating the objectivity and sufficiency of the alternatives presented in the questionnaire, this was submitted to 3 evaluators, professionals chosen for their experience in aquaculture. The surveys were applied virtually, previously the respondents were contacted by telephone (project coordinators or member of the technical team) to explain the objectives of the survey and give instructions on how to fill it out. The data obtained were processed and analyzed in Excel 2021 and in "R" software, the association of variables was estimated using the Chi-square test. The results indicate that there are productive and health factors that influence mortality rates.
