Aquaculture is an economic activity of fast grown and this means producing safe food, it is that they don’t cause consumer damage. Hazards that put food safety at risk are biological, chemicals and physical, therefore, identifying these hazards and avoiding them are essential to guarantee commercialization between countries. First, a list of current regulations related to biological and chemical hazards was made, in the states of Peru, Europe and the United States, finding a close similarity between the hazards and their maximum permissible limits. Subsequently, the export cases rejected between the years 2015 and 2020 were compiled, the search for information was made through 4 sources: SANIPES safety report (Organismo de Sanidad Pesquera), request to SANIPES, IntradeBid Web and international WEB portals (OASIS - FDA of the United States and RASFF of Europe), identifying only one case of biological hazard by Salmonella in the scallop during 2015. Finally the detection methods and their availability were described, in all cases the laboratories that carry out the tests must be accredited through ISO / IEC 17025 that guarantee their reliability and foreign trade, in addition, in the case of Peru, SANIPES is responsible for publishing the list of approved laboratories and methods.
