The consumption of food supplements, a type of food product whose purpose is to complement the normal diet of each person, has increased in recent years worldwide due to its easy access, economic availability and market globalization. However, its consumption may represent a health risk if it is contaminated with pathogenic microorganisms such as Staphylococcus aureus, Escherichia coli, Salmonella spp., etc., causing so-called foodborne illnesses. An important way to avoid these diseases is through constant monitoring, that is, from the acquisition of inputs, handling, manufacturing, to the sale of the food product. This monitoring is regulated, in the first instance, by the Quality Control department with its respective physicochemical and microbiological areas, and in the second instance, by the food regulatory entities of each country, who are in turn in charge of authorizing its commercial distribution guaranteeing its safety to the population. However, there are studies that show the presence of food products that are marketed without complying with microbiological regulations. It is here where the importance of a continuous analysis of the products that are already on the market is highlighted, to guarantee in this way the adequate compliance with the microbiological norms that ensure a food free of disease-causing microorganisms. This Professional Sufficiency Work, analyzed the microbiological quality control records of food supplements processed in a food laboratory in Lima, Peru, which were commercialized during the period March - August of 2021, to ensure that the records of these products complies the microbiological criteria established by the food regulatory entity in Peru. In addition, these results were compared with the criteria established by the food regulatory entities of Central America, Europe, the United States and the South American country Chile, to verify that their microbiological quality complies with national and international regulations.
