Flow cytometry is an efficient technique for the early detection of contamination in dairy products and beverages, this is the reason why these food industries are currently using flow cytometry to obtain the earliest release of their products to the market, allowing them to ensure time savings of shelf life for their products in the market. The present research is about the implementation of a rapid microbiological detection method based on flow cytometry applied to a dairy company in their yogurt production lines with the purpose of reducing the release time to the market. In a first stage, a diagnosis of the company was made, showing that they had the appropriate production and analysis volumes for the implementation of this technology. In a second stage, the compatibility of the flow cytometry method with the yogurt matrix was tested, performing an analysis in triplicate for each of the 38 varieties produced by the company. In the third stage, the detection efficiency of the method was verified by inoculating a contaminated solution at a concentration of 10 cfu/ml of 02 characteristic yeast strains, for which the yogurts evaluated were grouped into 08 families according to their similar characteristics. Finally, in the fourth stage, about a thousand analyzes were carried out on the production lines for both the implemented method and the plate count method, validating the flow cytometry method through a correspondence test with the other method. In this way, with the implementation of the flow cytometry method, it was possible to reduce the time of release of yogurt to the market from five days to 30 hours.
