Resumen: El presente proyecto de investigación consiste en la elaboración de una propuesta de mejora en el sistema de producción de una empresa dedicada al rubro de crianza de truchas en la región Cajamarca, basada en la semi automatización de los procesos, la cual se justifica técnica y económicamente con la finalidad de asegurar un crecimiento rentable y mayor eficiencia en las operaciones. Se realizó una exhaustiva recolección de datos que permitió analizar la situación actual de la empresa, se identificó que los procesos claves en la crianza de la trucha eran los siguientes: la alimentación y la etapa de selección y conteo, pues repercutían directamente en la productividad de la empresa. Finalmente, se determinó que el proceso a ser mejorado era la etapa de selección y conteo.
Al realizar el diagnóstico del proceso objeto de estudio a través del análisis de los indicadores específicos de desempeño tales como el tiempo de ayuno, mortalidad y factor de conversión del alimento, se determinó que la causa raíz de los problemas hallados es la falta de un buen sistema para la selección y conteo.
Se llevó a cabo el análisis de ingeniería del proyecto, en el cual se evaluó distintas alternativas para solucionar el problema hallado. Se determinó que las actividades a ser consideradas debían ser: evaluación de las máquinas, solicitud de préstamo al banco, compra e importación del equipo, prueba e instalación, inicio de puesta en operación y, finalmente, medición y control. Posterior a la determinación y ponderación de criterios de evaluación de las alternativas, se seleccionó la máquina Helios 25 en la adecuada separación de truchas para su crianza basada en tamaños similares. Este aspecto es importante para la apropiada alimentación y, su posterior, comercialización.
Se determinó que para implementar el proyecto se requiere una inversión total de S/ 295 782,74, 40% financiado mediante un préstamo con un TEA de 15% y el restante (60%), por aporte de capital propio. Los resultados de la evaluación económica y financiera manifiestan la viabilidad del proyecto, se estimó una VAN y TIR económica de S/24 453,36 y 19,11% (TIRE > CPPC) respectivamente. Por el lado financiero se tiene una VAN de S/72 203,19 y un TIR de 22,65% (TIR > COK) y la inversión se recupera antes del quinto año. De este modo se concluye que la propuesta de solución en la empresa es económica y financieramente viable.
The present research project consists of assessing the viability of an improvement proposal in the production system of a trout farming company located in Cajamarca region, based on process semi-automation. This proposal is justified both technically and economically in order to ensure profitable growth and greater operation efficiency. An exhaustive data collection was conducted to assess the company’s current situation. The identified key processes in trout farming are feeding and selection & counting of trout, as they directly impact the company's productivity. Finally, it was determined that the process to be improved is the selection & counting. An assessment of specific performance indicators, such as fasting time, mortality, and feed conversion ratio, revealed that the root cause of the problems found is the lack of a good system for selection & counting. An engineering analysis of the project was carried out, in which different alternatives were evaluated to solve the problem of the lack of a good system for the selection & counting of trout. From this analysis, the implementation of the solution was planned. Among the identified activities are machines evaluation, loan of the bank, purchase and import of equipment, testing and installation, operation start-up, and finally, measurement and control. As result of a trade-off analysis, the Helios 25 machine was selected for its adequate separation based on similar trout sizes. This aspect is important for breeding improvement, proper feeding and subsequent commercialization. It was determined that the implementation of the project requires a total investment of S/295,782.74, with 40% financed through a loan with a 15% annual effective rate and the remaining 60% through equity. The economic and financial evaluation results show the viability of the project, with an estimated economic NPV and IRR of S/24,453.36 and 19.11% (IRR > WACC), respectively. On the financial side, there is an NPV of S/72,203.19 and an IRR of 22.65% (IRR > COC), and the investment is recovered before the fifth year. Thus, it is concluded that the proposed solution for the company is economically and financially viable.
