ABSTRACT In this research was performed extraction and physicochemical characterization of extracted starch of tubers Pituca (Colocasia esculenta L. Schott), Achira (Canna indica L.) and Michuchi (Xanthosoma sagittifolium) from the Province of San Ignacio, Department Cajamarca. It was determined pH, moisture, ash content, protein content, fiber content, amylose content, particle size, gelatinization temperature, swelling power and syneresis. Analysis performed of Pituca, Achira and Michuchi starches; had values of pH (5.63, 6.2, 8.31), moisture (5.11%, 7.54%, 5.82%), ash (1.44%, 0.23%, 0.33%), protein (2.49%, 2.95%, 2.35%), fiber ( 1.5%, 7.63%, 5.5%), amylose (25.45%, 52.23%, 37.01%), particle size in microns (3.25, 83.51, 13.49), average gelatinization temperature (74.5 ° C, 73.3 ° C, 73 ° C), swelling power (24.15, 21.22, 31.93) g H2O / g starch, syneresis (2.36%, 11.82%, 4.33%).
