ABSTRACT Hydration is a very important stage for the processing of the pea and is carried out before many other processes, such as germination, cooking, extraction. Research and publications have recently increased on this topic that associates the description of the mechanisms involved and the recent technologies for processing. However, in the process there are many aspects that are few known; this is due to its complexity. This study shows the effect of hydration on the change of volume and moisture content of dried pea grains (Lathyrus sativus), using 5 models of mass transfer for hydration, which was obtained that the Peleg model is the one that better fits and also when determining the relationship between the volume and the kinetic parameters of mass transfer for hydration it was observed that Gompertz is the most optimal. However, this process lasted many hours to hydrate (9 hours). Therefore, its study, description and optimization are very desirable.
