Abstract: El objetivo de la presente revisión es dar a conocer cuáles son las últimas investigaciones realizadas en la aplicación de recubrimientos comestibles en la industria alimentaria a partir del quitosano, ya que con la utilización de este tratamiento se pueden añadir otras sustancias de interes, ya sea para aumentar la vida de anaquel, o las características del alimento. Se pueden añadir compuestos antimicrobianos, antioxidantes y saborizantes que contribuyen a mantener la calidad e incrementar su vida útil. Las investigaciones desarrolladas a partir de recubrimientos comestibles de quitosano aplicados a productos hortofrutícolas, carnes y productos lácteos, son una alternativa viable para la industria y han demostrado ser efectivos en la conservación controlando transferencia de gases, crecimiento microbiano, así como manteniendo las características deseadas por los consumidores como, apariencia fresca, firmeza, brillo, color, calidad y valor comercial. Estos se aplican con el objetivo de extender la vida útil de los alimentos y proveen la posibilidad de mejorar la seguridad del producto mediante la limitación de transferencia de humedad, oxígeno y compuestos responsables del sabor, color y aroma.
ABSTRACT The objective of this review is to present the latest research in the application of films or edible coatings in the food industry from chitosan, since with the use of this treatment other substances of interest can be added, since either to increase the shelf life, or the characteristics of the food. Antimicrobial compounds, antioxidants and flavorings can be added that contribute to maintain the quality and increase its useful life. The research developed from edible chitosan coatings applied to horticultural products, meats and dairy products, are a viable alternative for the industry and have proved to be effective in the conservation by controlling gas transfer, microbial growth, as well as maintaining the desired characteristics. Consumers like, fresh appearance, firmness, brightness, color, quality and commercial value. These are applied in order to extend the shelf life of food and provide the possibility of improving the safety of the product by limiting the transfer of moisture, oxygen and compounds responsible for taste, color and aroma.
