In response to the need for ecological alternatives in food packaging that counteract microbial contamination and prolong food preservation, this research focuses on evaluating the antimicrobial effect of the ethanolic extract of Caesalpinia spinosa in a biofilm on the growth of Staphylococcus aureus and Escherichia coli. Using tara pods as a source of the extract, starch-based biofilms were prepared with incorporations of 1%, 3%, and 5% of ethanolic extract of tara, and their antimicrobial effect was evaluated by measuring zones of inhibition in cultures of bacterial strains. The effectiveness of the biofilms was statistically analyzed using ANOVA to compare the inhibition zones generated. Biofilms with 5% extract showed the highest efficiency, with inhibition zones of up to 16.9 mm for S. aureus and 13.9 mm for E. coli. The results confirmed a direct relationship between the concentration of the extract and the antimicrobial capacity of the biofilm. Biofilms enriched with tara extract have proven to be a viable solution to combat microbial contamination in the food industry. Its effectiveness varies with extract concentration, offering significant potential for applications requiring natural and biodegradable antimicrobial barriers. This approach promotes not only food security but also environmental sustainability.
