ABSTRACT There is a growing concern for food safety and security, food industries are forced to look for an emerging technology capable of detecting and quantifying pollution, especially those of biological origin. Of the existing technologies, hyperspectral images (HSI) are considered as a good alternative that can be contracted along different stages in the food and non-destructive production chain. This review of the most important applications of HSI in detecting microbial contaminants in food. First, the traditional characteristics used to detect microbial contamination in food, which have some disadvantages for practical applications, as detailed in the respective sections. Second, the most important applications of HSI to detect microbial contamination in food made in the last decade. Finally, the current and future challenges, the advantages and disadvantages of HSI applications are presented.
