Abstract: El objetivo general de este trabajo es determinar la correlación entre el color y las características de textura del aguaymanto (Physalis peruviana), y así poder predecir ciertas características con solo conocer los parámetros del color del aguaymanto. Para la realización de este trabajo se utilizó aguaymanto de Cajabamba, región Cajamarca, en la que se realizó una selección y clasificación de la materia prima según su estado de madurez; verde, verde-pintón, pintón- maduro, maduro y sobremaduro, tomando veinte muestras para cada estado. Se determinó las medidas de textura mediante un texturómetro de meza, en el cual se evaluaron dos características de textura por cada estado de madurez: dureza y firmeza. Los parámetros del color (a*, b* y L) fueron tomados con el colorímetro digital en tres diferentes zonas de la fruta: pedúnculo, cara lateral y base de la fruta. La determinación de correlación entre el color y las características de textura fueron evaluadas utilizando el análisis de regresión múltiple a través del coeficiente de correlación de Pearson (r) y el coeficiente de determinación (R2). Se determinó que el % de acidez aumenta a medida que el producto va madurando, y de igual maneraocurre con los º Brix. Se determinó que existe una relación positiva entre el color y las características de textura del aguaymanto, haciéndose posible de esta manera poder predecir medidas de dos de las características de textura: dureza y firmeza, sin hacer uso de pruebas destructivas para la fruta y solamente con medidas cuantitativas de color mediante colorímetro.
ABSTRACT The overall objective of this work is to determine the correlation between color and texture characteristics aguaymanto (Physalisperuviana), so we can predict certain features only know the parameters aguaymanto color. aguaymanto Cajabamba, Cajamarca region, in which a selection and classification of the raw material according to its maturity was conducted was used to carry out this work; green, green-ripening fruit, pintón- mature, ripe and overripe, taking twenty samples for each state. Texture measures were determined by a texturemeter of meza, in which two textural characteristics were evaluated for each stage of maturity: toughness and firmness. Color parameters (a *, b * and L) were taken with digital colorimeter in three different areas of the fruit: peduncle, lateral side and base of the fruit. Determining correlation between color and texture characteristics they were evaluated using the multiple regression analysis through the Pearson correlation coefficient (r) and the coefficient of determination (R2). It was determined that the% acidity increases as the product matures, and the same happens with Brix. It was determined that there is a positive relationship between color and texture characteristics of aguaymanto, becoming thus possible to predict measures of two of the textural characteristics: toughness and firmness, without the use of destructive testing for fruit and only quantitative measures color by colorimeter.
