The main purpose of this research was to determine the survival time of the Staphylococcus aureus ATCC 25923 in artisanal blended yogurt stored at refrigeration temperature. Blended yogurt was prepared using the Lyofast Y 456 B lactic culture, which included strains of Streptococcus thermophilus and Lactobacillus delbrueckii subsp. bulgaricus. From the prepared yogurt, 100 mL were distributed into a total of 84 airtight plastic containers. Then, the S. aureus ATCC 25923 strain was reactivated, and a bacterial suspension in 0.85% saline solution was generated, standardized to the concentration corresponding to tube No. 0.5 of the McFarland nephelometer. Subsequently, each container containing 100 mL of yogurt was inoculated with 1 mL of this bacterial suspension, mixing manually. This experimental procedure was carried out in triplicate. Additionally, a control group that was not inoculated with the bacterial suspension was included. Bacterial counts were performed using the spread plate method on Baird Parker agar, followed by an incubation period at 37 °C for 24 hours. Evaluations of the counts were carried out every 24 hours for 20 days, with the aim of analyzing the survival of S. aureus in the blended yogurt medium stored at refrigeration temperature. An average initial count of S. aureus ATCC 25923 of 2.99 x 106 UFC/mL was obtained. The mean count was reduced to 3.00 x 100 UFC/mL after 19 days of storage. In addition, the death rate of S. aureus ATCC 25923 was calculated to be 0.58 UFC/day. It is concluded that the survival time of S. aureus ATCC 25923 in artisanal blended yogurt stored at refrigeration temperature is 19 days and the death rate of S. aureus ATCC 25923 is 0.58 UFC/day.
