ABSTRACT The objective of this study was to determine the effect of gum concentration and the sensory attributes that characterize an organic tomato light. A unifactorial design was used, with 4 treatments to study: T1 (0.05% guar gum), T2 (0.10% guar gum), T3 (0.15% guar gum) and T4 (0.20% guar gum). Prior to the analysis of the treatments, the physicochemical characteristics of the tomato pulp were determined. Subsequently, the physicochemical parameters in the organic tomato light jelly were determined, obtaining a product with pH values and soluble solids (° Brix). A sensory analysis was performed to determine the treatment with greater general acceptability, for which an acceptance test was carried out using a hedonic escalation and CATA questions. The attributes sweet taste followed by bright appearance, homogeneous texture, natural flavor, very spreadable and absence of strange flavor were the main attributes that consumers want to find in their ideal jelly. Consumers were able to sensory describe the organic tomato light jelly treatments under study and the ideal shake using the CATA quest, so this methodology is adequate to interpret the preferences of consumers.
