ABSTRACT The whey obtained from the cheese manufacturing industry represents a very good opportunity to make a flavored drink, due to the great energy contribution that the serum provides. The consumption of cranberry provides a series of health benefits (highest antioxidant capacity of all fruits, low in calories, have a high content of fiber, vitamin C, etc), in addition, which are pleasant taste. Having as a perfect complement to quinoa, recognized worldwide for its excellent nutritional qualities, and the great contribution of proteins, amino acids, fats, minerals, making it the perfect ingredient to elevate the nutritional value of this hydrating drink, which can be directed towards all types of public, mainly school-age children. The objective of this research work was to determine the physicochemical characteristics of a hydrating drink based on lacto whey, blueberry pulp and enriched with quinoa. Obtained the drink, we proceeded to determine the analysis of viscosity, total solids, pH, acidity, density, fats and proteins, following the methods of the AOAC. The average results yielded pH = 5.22, lactic acid 0.11%, fat 0.04%, proteins 2.1%, caseins 2.36%, density 1.09 g / ml, solid extract 79.74 and viscosity with a k of 320.64 Pa.sn.
