ABSTRACT The use and exploitation of plant waste is of great importance, especially if we currently talk about the circular economy. In this sense, this work aimed to evaluate the effect of temperature (30 – 50 °C) and cellulase concentration (0.1 – 2 % w/v) in obtaining reducing sugars from native potato peels (Solanum tuberosum) varieties “huevo de indio” and “huayro”. For this purpose, a complete factorial design (DCCR) was established with 11 experimental treatments. The enzyme used was Aspergillus niger cellulase, which operated at pH 5 and in a 10% w/w potato peel flour suspension for 12 hours. The proximal analysis revealed a soluble solids concentration of 2.15 °Brix in the “huevo de indio” variety and 1.25 °Brix in the “huayro” with 1.33 and 1.25% reducing sugars, respectively. The results show that concentrations of reducing sugars (3.5-dinitrosalicylic acid method) between 9.02 – 17.66 % were obtained in the potato peel flour of the “huevo de indio” variety and between 8.38 - 19.75 % in the “huayro” variety. The temperature and enzyme concentration significantly influenced (p < 0.05) the concentration of reducing sugars, with the optimal temperature region between 43.2 – 45 °C for the two varieties, while the optimal enzyme concentration for the “huevo de indio” variety It was between 1.82 – 1.96 % w/v and between 1.70 – 1.88 % w/v for the “huayro” variety.
