ABSTRACT The objective of this investigation was to determine the rheological and textural characteristics of native starch gels extracted from the native variety, Egg of Indium and Renaissance. The ANVA indicated a significant difference between the properties of the samples of the two varieties evaluated. It was determined that the starch gels of both varieties exhibited a non-Newtonian flow behavior of the general plastic type following the Herschel Bulkley model, with a yield stress of 31.93 ± 26.43, 39.50 ± 1.29; consistency index of 120.15 ± 23.68, 64.47 ± 10.47 and rheological index of 0.50 ± 0.05, 0.53 ± 0.02 respectively. It was determined through the texture profile analysis hardness values of 1060.82 ± 159.09, 768.49 ± 56.78, gumminess 993.51 ± 186.76, 734.45 ± 89.48, chewiness 938.48 ± 197.43, 668.5 ± 168.25, cohesiveness 0.89 ± 0.08, 0.93 ± 0.12 and resilience 0.64 ± 0.16, 0.66 ± 0.03 for potato starch gels, variety of Indian Egg and Renaissance, respectively.
