ABSTRACT The effect of temperature on the adsorption isotherms at 25 and 45 ºC of candied expanded wheat was evaluated. The experimental data were adjusted with the GAB, BET, HENDERSON and Oswin models and their life was estimated using the model of Heiss and Eichner. Samples of 0.5 g of wheat (Triticum aestivum) expanded candied, were placed Aqualab Decagon Series 4, conditioned for the experiment at specific temperatures (25 and 45 ºC) until reaching the equilibrium moisture condition. The experimental data were molded with GAB, BET, HENDERSON and Oswin equations. It was determined that there was a significant effect of the temperature (25 and 45ºC) in the confined expanded wheat adsorption isotherms, showing that as the temperature increases, the adsorption isotherm tends to move to the lower right. The GAB model presented a good adjustment of the experimental data with the coefficients of determination higher than 0.9% and a% E lower than 10%, reporting values of monolayer (0.057 y 0.045 g water / g ms). With the model of Heiss and Eichner, based on a critical factor under given storage conditions (90% RH), it was possible to estimate the shelf life of candied expanded wheat, being 3.1 y 2.1 months at temperatures of 25 and 45 ° C respective.
