Abstract: Se evaluó el efecto de la temperatura en las isotermas de adsorción a 25 y 45 ºC de trigo expandido confitado. Los datos experimentales fueron ajustados con los modelos de GAB, BET, HENDERSON y Oswin y se estimó su vida útil empleando el modelo de Heiss y Eichner. Muestras de 0.5 g de trigo (Triticum aestivum) expandido confitado, fueron colocados en el analizador de humedad, acondicionados para el experimento a temperaturas especificas (25 y 45 ºC) hasta llegar a la condición de humedad en equilibrio. Los datos experimentales se moldearon con ecuaciones de GAB, BET, HENDERSON y Oswin. Se determinó que hubo efecto significativo de la temperatura (25 y 45 ºC) en las isotermas de adsorción de trigo expandido confitado, mostrando que a medida que se incrementa la temperatura, la isoterma de adsorción tiende a desplazarse a la parte inferior derecha. El modelo de GAB presento un buen ajuste de los datos experimentales con los coeficientes de determinación superiores a 0,9 % y un porcentaje de error (%E) menor a 10%, reportando valores de monocapa (0.057 y 0.045 g agua/g ms). Con el modelo de Heiss y Eichner, basado en un factor crítico bajo condiciones de almacenamiento dadas (90% de humedad relativa), se logró estimar el tiempo de vida útil de trigo expandido confitado, siendo 3.1 y 2.1 meses a las temperaturas de 25 y 45 ºC respectivamente.
ABSTRACT The effect of temperature on the adsorption isotherms at 25 and 45 ºC of candied expanded wheat was evaluated. The experimental data were adjusted with the GAB, BET, HENDERSON and Oswin models and their life was estimated using the model of Heiss and Eichner. Samples of 0.5 g of wheat (Triticum aestivum) expanded candied, were placed Aqualab Decagon Series 4, conditioned for the experiment at specific temperatures (25 and 45 ºC) until reaching the equilibrium moisture condition. The experimental data were molded with GAB, BET, HENDERSON and Oswin equations. It was determined that there was a significant effect of the temperature (25 and 45ºC) in the confined expanded wheat adsorption isotherms, showing that as the temperature increases, the adsorption isotherm tends to move to the lower right. The GAB model presented a good adjustment of the experimental data with the coefficients of determination higher than 0.9% and a% E lower than 10%, reporting values of monolayer (0.057 y 0.045 g water / g ms). With the model of Heiss and Eichner, based on a critical factor under given storage conditions (90% RH), it was possible to estimate the shelf life of candied expanded wheat, being 3.1 y 2.1 months at temperatures of 25 and 45 ° C respective.
