ABSTRACT The objective of the present work was to characterize the gluten-free cupcake sensorially using analysis of main compones and CATA questions. Developing three samples of gluten-free cupcake using oatmeal and rice flour as a base; the first sample used 100% oatmeal, the second 85% oatmeal and 15% rice flour and the last sample used 70% oatmeal and 30% rice flour. The samples were made at the Zucarella pastry production center, using all the optimum pastry equipment for a correct preparation of the gluten-free cupcake; the baking was at the temperature of 165ºC with a time of 30 minutes, the industrial oven allowed an even baking for all the samples. For the characterization of the gluten-free cupcake, a general acceptability was evaluated, which showed us that gluten-free cupcakes based on pure oatmeal and oatmeal with a low percentage of rice flour had greater acceptability and consumers did not notice the small difference of added rice flour. In the characterization by attributes with the CATA questions, the consumers could group the samples into two groups, noting in two clusters one in which the cupcake sample was found only with oatmeal and in the other cluster the cupcake samples contained flour from rice. Having the data obtained can make a new cupcake gluten-free ideal, which should have the characteristics that the consumer wants, such as being firm as a cake, have a slight sweetness and with a scent of cake, keeping in mind that the cupcake Gluten-free that came closest to those characteristic was the elaborate pure oatmeal flour.
