ABSTRACT The objective of this work was to determine the importance of nutritional labeling in the decision to purchase food in consumers of Trujillo; given that currently consumers do not read nutritional labeling, and those who do, in some cases do not understand what they read; the dimensions considered to achieve the specific objectives were knowledge of nutritional labeling, reading, comprehension and influence. A survey was used as a data collection instrument, through which a significant amount of information was obtained in a clear and concise manner. The analysis and interpretation of the data obtained was performed. It was found that the nutritional labeling of food relatively influences the purchase decision of consumers, the highest percentage of consumers who read the information on nutritional labeling belong to the male gender and have a university higher education degree. The nutritional labeling of food has proven to be important for the vast majority of our volunteer respondents, since they stated that "proper reading and understanding of nutritional labeling can improve their diet and that of their family." Likewise, the reasons for "not reading the nutritional labeling" were identified, the most relevant being: "Lack of habit", "Lack of attention" and "Lack of motivation".
