ABSTRACT This research work aimed to evaluate the effect of DL-alphatocopheryl acetate and temperature on the kinetics of the iodine and peroxide index in pumpkin seed oil (Curcúbita pepo L.). For this, four treatments of pumpkin seed oil were established (T1: 0 % DL-alphatocopheryl acetate and 25 °C, T2: 0 % DL-alphatocopheryl acetate and 45 °C, T3: 0,025 % DL-alphatocopheryl acetate and 25 °C and T4: 0,025 % DL-alpha-tocopheryl acetate and 45 °C). In these samples, the parameters of peroxide value and iodine value were evaluated over a period of 150 days. The results show that the addition of DL-alpha-tocopheryl acetate causes better conservation of the oil parameters. Furthermore, the increase in temperature favors its denaturation. The kinetic constants k was determined, which were higher in DL-alphatocopheryl acetate, with a zero-reaction order in all cases. The activation energy determined by the Arrhenius equation showed values of 3,91 and 2,44 kcal/mol for peroxide index and iodine index respectively. Finally, all treatments differed significantly from each other (p < 0,05).
