ABSTRACT The bioactive potential, proximate composition and color characteristics were determined in 3 commercial samples of quinoa (Chenopodium Quinoa Willd.); red quinoa, white quinoa and black quinoa. The total phenolic content varied from 68.441 to 149.564 mg of gallic acid equivalents/100 g D.M., the flavonoids contents varied from 88.819 to 175.911 mg of quercetina equivalent/100 g D.M., the betalains content varied from 0.026 to 0.148 mg of betalains/100 g D.M., anthocyanins were determined in red and black quinoa (129.799 and 164.983 mg of cyanidine-3-glucoside equivalent /100 g D.M.), the antioxidant capacity varied from 53.493 to 79.553 (Percent inhibition of DPPH radical). The 3 quinoa samples showed good quality respect to the proteins content (13.744 – 17.529 g/100 g D.M.). The saturation degree (Chroma <22) of the 3 quinoa samples indicated that the principal colour was not pure, in addition, an increase in darkness (lower L* values) was accomplished by the decrease of hue and chroma values (saturation), which was realted to a decrease in red color’s intensity. By the principal component analysis (PCA), it was determined that red and black quinoa differ from the white quinoa for exhibit predominance in the bioactive potential and proximal analysis; in addition, the black quinoa predominated for the nutritional content (protein, total fat and energy) and the red quinoa had the highest bioactive potential (total phenolic content, betalains and antioxidant capacity). This investigation showed that the 3 commercial samples of quinoa have excellent potential as sources of health-promoting bioactive compounds and a good nutritional profile that provides adequate nutrition.
