The increase in the consumption of dehydrated fruits is the global trend of countries that prefer healthy foods, this has contributed to a significant growth in imports in recent years. A positive evolution of imports of blueberries, grapes and dehydrated mango by the US is evident. This provides a promising outlook due to the evidence of a growing foreign market, which is why the opportunity arises for the proposal of a fruit processing plant. to increase the export of dehydrated products from Lambayeque. The general objective of this research was to determine the viability of installing a fruit processing plant to increase the export of dehydrated products from Lambayeque. It was decided to determine the demand for the project by projecting supply, unsatisfied demand and availability of raw materials, which is why it was decided to produce 150 tons in the first year and 5% of the previous year in the following years. Likewise, through macro and micro location factors to determine the most appropriate place for the installation of the plant. The physical size of the plant using the Guerchet and SLP method, the capacity and number of equipment and operators with the analysis of plant capacity and availability of raw materials. As a result, it was obtained that the plant will be in Jayanca, Lambayeque, which will participate in 18.8% of the unsatisfied demand in the United States. A total of 1,293.67 tons will be processed in the first year and 1,506.83 in the fifth year, the area required to build the plant will be a total of 2,212.13 m2. 7 machines and 7 operators are required. The project is viable since a NPV of S/. 10 392 789,62, an IRR of 263% and a AARR that represents 12,11%.
