Abstract: El presente trabajo de investigación se elabora para conocer el alto valor nutritivo dela Cañihua comparando con otro cereal andino como la quinua , saber los departamentos donde se realiza el mayor cultivo del producto, conocer las diferentes propiedades que cuenta la Cañihua, las diferentes variedades que tiene este grano andino, el tiempo de cosecha que demanda dicho producto, además de saber sobre la problemática que tiene la Cañihua en tiempos de cosecha, dar a conocer las exportaciones de Cañihua a Japón desde el 2012 al 2017. Asimismo, explicar las ventajas que tiene el tratado de libre comercio de Perú –Japón. Para las exportaciones de este grano andino. La Cañihua es un cereal andino que a través de los años las hectáreas destinadas para la cosecha de este producto están disminuyendo ya que se emplean técnicas artesanales para la recolección de este grano , no tienen uniformidad de madurez, y por esa razón los agricultores tienen que realizar hasta tres cosechas para poder ofrecerlas en el mercado, el factor clima es otra problemática ya que las temporadas de cosecha de este grano son entre los meses de marzo y de Abril temporada de helada que complica la accesibilidad a estas zonas y poder recolectarlas. La cantidad recolectada solo abastece al mercado nacional en su mayoría y queda muy poco para poder exportarla. Por los tanto el Estado no puede promocionar este producto ya que no tiene una producción constante y sostenida; la cual hace que no tengamos una oferta exportable.
The present research work is elaborated to know the high nutritional value of the Cañihua compared to another Andean cereal such as quinoa, to know the departments where the greatest cultivation of the product is carried out, to know the different properties that the Cañihua has, the different varieties that This Andean grain has, the harvest time that this product demands, in addition to knowing about the problems that Cañihua has in harvest times, to make known Cañihua exports to Japan from 2012 to 2017.
