The effect of the proportion of passion fruit pulp (22.5%, 30%, 45%) and the addition of cushuro hydrocolloid powder (0.80%, 0.90%, 1.00%) on the physicochemical parameters and general acceptability of a passion fruit drink was evaluated. The Levene test indicated homogeneity of variance for apparent viscosity, while the analysis of variance revealed a significant effect (p < 0.05) of the independent variables on pH, soluble solids, titratable acidity and apparent viscosity. For the sensory analysis, 50 untrained panelists participated. The Friedman test showed significant differences (p < 0.05) in overall acceptability between formulations. It was determined that the optimal formulation was F5, with 30% passion fruit pulp and 0.90% cushuro powder, which presented a pH of 3.09, soluble solids of 15.8 °Brix, titratable acidity of 4.3%, apparent viscosity of 116.4 mPa.s and the highest general acceptability, with a mode of 8 points, corresponding to ""I like it very much"". This treatment is recommended for the development of a passion fruit drink that meets both the physicochemical requirements and the sensory preferences of consumers
