The present research sought to evaluate the technological properties‘and lipid oxidation of vacuum packaged alpaca meat. Loins (Longissimus thoracis and Iumbbrum) were collected from a local market, of male alpacas of Huacaya race and between 2.5 and 3 years old. L. thoracis and lumborum samples were taken two days after slaughter (day 0), cút (n=15), individually vacuum packed (99%) and stored in refrigeration at 4 °C. Analyses were conducted on days 0, 4, 11, 18 and 25, through the following measurements: pH, water holding capacity (assessed through the capacity to incorporate water :and the water losses -by exudate,. pressure and cooking), lipid oxidation (TBARS), hardness (WBSF) and metmyoglobin content. The- proximate chemical composition showed that alpaca meat is high protein (23.07%) and low fat (0.26%), oompareá to flesh of other animals species. Statistical analysis showed that the storage time has a significant effect (p<0.05) on the capacity to incorporate water, water losses by drip and cooking, the lipid oxidation and the content of metmyoglobin. — Alpaca meat packaged under vacuum, showed a clear decrease in pH, water holding capacity and hardn&-ss, throughout the days of storage; however, an increase in metmyoglobin content was noticed. The resulis obtained indicate that the vácuum pwkagíng adversely affects the water holding capacity and the colour of the meat, whereas favours the tenderness and lipid oxidatión stops.
