In this research, two meat products were developed based on kabanosy alpaca meat: one with cooked quinoa and other with boiled potato. In regards to the physicochemical tests, during the smoking-cooking process, it was found that the water activity (Aw) decrease in both treatments at 30 per cent inclusión (potato inclusión was 0,926-0,872 and quinoa inclusión was 0,940 to 0,888) and weight loss decreases as the percentage of inclusión increases (kabanosy with quinoa 58,55 - 58,61 per cent; kabanosy with potato 59,35 - 61,11 per cent). The texture profile in the treatments with inclusión of quinoa showed a strong correlation (r20,'80) among hardness, cohesiveness, gummineés and chewiness and the added inclusión percentages. In the other hand, the treatment that used the potato inclusión showed a strong correlation (r>0,80) among hardness, elasticity and gumminess chewiness and the inclusión of the added percentages. These parameters tend to decrease — with the increment of the proportion of the added quinoa or potatoes (with the exception of elasticity). Furthermore, a preference test was made to 100 consumers separately for each type of inclusión (quinoa and potato), resulting on no preference (»>0,05) for any of the products made with different levels of inclusién of quinoa or potato. Since thé consumer did not show preférence for any of the treatments, in each case 30 her cent inclusión was chosen to test moisture, pH, color, microbiological load, and texture profile during storage (day 0, 30 and 60). It was found that these characteristics get affected by the storage time and the type of inclusión (p>0,05), observing a decrease in moisture, pH, L* and a* and an increase in the b* value, as well as the mesophilic aerobic bacterias and yeasts, among other affectations.
