The aim of the present investigation was to study the effect of the sunny, two methods of blanching (boiling and microwave) and two drying temperatures (60 and 80°C) in the content of phenolic compounds, anthocyanins and antioxidant capacity determined by four assays (DPPH, ABTS, FRAP and ORAC) in the purple mashua (Tropaeolum tuberosum Ruíz & Pavón). The results were analyzed with the Statistica 10 statistical software through a completely randomized design (CRD) for all established treatments, besides two factorial designs, one to evaluate the mashuas only blanched, and one for mashuas blanched and dried. Duncan test was used to determine significant differences. The most appropriate treatment for the best conservation of phenolic compounds is: sunny, blanched by boiling of whole tubers and dried at 80°C. The higher retention of anthocyanin was obtained in mashua without sunny or sunny, without blanching and dried at 60°C. In the case of the antioxidant capacity evaluated by DPPH and FRAP assays, the best results were obtained with the treatment: without sunny, blanched by boiling of whole tubers (4.5 minutes) and dried at 80 *C. For ABTS assay, the most appropriate treatment was: sunny, blanched by boiling of whole tubers (4.5 minutes) and dried at 80 °C; while for the ORAC assay was sunny, blanched by boiling of whole tubers and dried at 60°C or 80°C.
