The objective of this thesis is to obtain a beer with an Andean cereal whose nutritional and organoleptic contributions generate added value to the final product. To brew beer we need water, malt, hops and yeast, and if we want to insert another cereal, we must malonate it so that the yeasts convert the starches into alcohol. To use cañihua in beer brewing, we malonate it and insert it in the mash stage along with the barley malt, producing a must which will pass to a boiling stage where a minimum quantity of hops is added, enough to that contributes a slight bitterness and a floral tone without dulling the characteristics of the cañihua. At this point the must is quickly cooled and the yeast is added to ferment the must obtaining beer. In order to find the proportion that most appeals to the consumer, beers with different proportions of barley malt and cañihua malt were produced. The final product most accepted by the group of experts was the beer that contained 35% by weight of cañihua. The economic evaluation is corroborated with the production of the pilot plant where the result of the final product obtained from the tests carried out is reproduced, in addition the results of the economic evaluation are contrasted with the criteria of the hypothesis.
