The free radicals present in the environment damage our cells, thus producing rapid aging and various diseases, which is necessary to look for new sources of antioxidant compounds in order to combat oxidative stress in our body. The objective of this research is to evaluate the antioxidant activity of the crude aqueous extract (EBA), crude organic extract (EBO) and their residues, obtained from the species Phyllanthus stipulatus (Raf.) Webster (chancapiedra) through maceration processes with solvents. Likewise, carry out controlled release studies of extracts and/or residues with good antioxidant activity, loaded in chitosan nanoparticles. The extraction was carried out by ethanolic and aqueous maceration from the chancapiedra sample, thus obtaining 277.24 g EBO and 251.32 g EBA, respectively. From EBO, butanolic (BUT), chloroform (CLO) and aqueous (AC) residues were obtained. The antioxidant capacity of the extracts and residues was evaluated by chemical tests with DPPH and electrochemical tests, where it was determined that EBO and BUT present the best antioxidant activities. Therefore, and by means of the HPLC-MS and 1H and 13C NMR techniques, the secondary metabolites present in both samples were identified and elucidated. The EBO and BUT were loaded onto chitosan nanoparticles (Cs-EBO and Cs-BUT) by the ionic gelation method. The particle size of the uncharged chitosan nanoparticles, Cs-EBO and Cs-BUT were 169.5, 356.2 and 197.7 nm, respectively. The Z potential and the polydispersity index of the chitosan nanoparticles indicated good stability. Infrared spectroscopy (FTIR) and scanning electron microscopy (SEM) confirmed the interaction, charging and formation of the nanoparticles. Furthermore, based on their controlled release study, it was determined that Cs-EBO can release more loaded sample compared to Cs-BUT, readily releasing loaded EBO. Finally, we can indicate that the EBO extract and BUT residue of Phyllanthus stipulatus (Raf.) Webster (chancapiedra) could be considered as good sources of antioxidant agents, since these, when encapsulated in chitosan nanoparticles, will have good and prolonged antioxidant activity.
