The objective of the present investigation was to optimize the operating conditions for the hydrolysis of shrimp waste proteins (LR), which allows, through the use of a proteolytic strain to deproteinize the LR, as a preliminary step for their adequate management, obtaining a variety of products such as protein hydrolysates, chitin, chitosan, astaxanthin, calcium salts, between others. Two bacterial strains RL-08 and RL-42, of the genera Shewanella sp. and Bacillus sp. respectively were evaluated. The strains were chosen for their proteolytic capacity and come from the Biotechnology Laboratory of the Instituto Tecnológico de la Producción (ITP), which has a bank of strains. The results indicated that RL-08 strain had a higher growth in shrimp waste and was more effective in desproteinizing them than when the RL-42 strain was used. The optimization of the DP bioprocess was carried out using the RL-08 strain through the use of the response surface methodology (RSM), for which three independent variables were evaluated for their effect on the DP bioprocess of shrimp waste. The RSM considered the individual and interaction effects of the independent variable’s temperature (30, 35 and 40°C), time (30, 42 and 54 hours) and amount of shrimp waste (10, 17 and 24 w/v); while the responses were percentage of desproteinization (%DP) and soluble protein (mg albumin). The results showed that RL-08 strain in its best assay (35°C, 42 hours and 28.8 w/v) was able to reduce the protein content of shrimp waste by 79.5% (%DP), generating 207.4 mg of soluble protein (mg of albumin); however, the process could not be optimized by RSM.
