The commercial and artisanal brewing industry bases its production on the Content Purity Law, which establishes that a beer is of quality when it contains the elements of production such as water, barley malt, hops and yeast. Beer production begins in the mash room, where the malt is processed to release fermentable sugars. The sugars present in malt are stored in the form of starch. The malt is mixed with water to obtain a puree. The enzymes in the malt are released and convert the starch to sugar. The sugary liquid, known as must, is extracted from the dough and boiled with hops, which gives it bitterness and flavor. The wort is then cooled and yeast is added. Yeast ferments the wort, producing alcohol and CO2, transforming it into beer. The brewing process is divided into several stages, each of these handling its own variables, such as pressure, temperature, level, flow, etc. In each of these stages, there is a certain level of risk for the operating personnel in the event of a possible failure of the system, which is why it is important to have constant control and supervision of the variables involved to minimize the possible dangers in the work environment.
