Factories at the international level are adopting lean manufacturing for the continuous improvement of their production lines, as it is cheaper than reengineering, and thus be more competitive, which is why it is proposed to apply this methodology to our factories, especially in the MYPES sector that have been growing with demand, but without adequate planning, which is causing them to fail to deliver their products, among others. This is how the MYPES of the edible products sector have been taken, and within them the edible powdered gelatins have been taken, as it is a low-cost product and of great national consumption, taking a factory as an example of application of this sector. Therefore, the thesis consists of the following chapters: Chapter one describes the background, the problematic reality, the formulation of the problem, the justification and importance of the research, the objectives, the hypotheses and their variables, the consistency matrix, the unit of analysis, the type of research to be carried out, information sources, instruments and data collection and processing techniques. Chapter two contains the theoretical support of the tools of Lean Manufacturing, as well as the most relevant aspects of this methodology that are used in the development of this research work. In chapter three the production resources are analyzed and a diagnosis is made of the current situation of the edible gelatin powder factory “La Melosita”, and based on the application of various Lean Manufacturing tools, the main causes that originate the activities that do not add value to the production process. In chapter four the improvement proposal is designed through the application of Lean Manufacturing tools, such as a new distribution of the gelatin production line, implementation of the 5S and the union of processes, thus achieving an increase in productivity by 200%, with which it is concluded that the methodology based on Lean Manufacturing substantially improves the productivity of MYPES in the edible gelatin sector.
