The egg product industry in Peru and Latin-American has had a continues growth, unlike the shell egg, the egg product can be long-term storage and it has lower transportation cost. The powdered egg white is one of egg product with the highest production whose final pasteurization is realized in a pasteurized chamber in order to reduce the bacteriologic contamination and improve functional properties of the powdered white egg. The pasteurized chamber is a complex process with two inputs and two outputs, the inputs are flow rate and heat flux, the outputs are chamber’s humidity and chamber’s temperature. The process has no linearities, has a high process time constant, and time delay, these characteristics increase the complexity of the control. The research consists in development a temperature and humidity control of the powdered egg white pasteurized chamber in the egg production industry. In first instance, the open loop process dynamics characterization is realized with experimental tests of data acquisition, these results are processing and organize to allow the observation of the dynamic and static open loop performance, identifying the operation lineal zone, obtain the parameters of process dynamic response, the respective transfer functions and the coupling between humidity output and heat flux process input. The development of humidity control strategy is based on PID getting improve the dynamic response and zero stationary error. The development of temperature control strategy is based in ON/OFF with an ON-time modulation. The developed control gets reduce the energy consumption improving the energy efficiency and performance of the powdered egg withe pasteurization process.
