This research study seeks to determine the level of exposure to low temperatures that workers in the fishing industry have in their process of labeling and packing frozen hydrobiological products for direct human consumption. The main objective of this research is to lay the foundations to quantify the risk of being exposed to low temperatures; as well as, determine the necessary controls to mitigate or, as far as possible, attenuate the impact on the health of people working under these conditions. The conditions described in the present study have been influenced by the temperature necessary for the conservation of the hydrobiological product, the wind speed generated by diffusers to maintain it, the humidity of the room, the work clothes used, the physiological conditions inherent to each worker and the time that the personnel spend in this environment. The results presented urge us to implement controls for the thermal comfort of workers in the classification of engineering, administrative and personal protective equipment. For the development of this study, current national regulations, international regulations, and various sources of trust were reviewed, such as the national institutes for occupational safety and health in various countries, international standards organizations, among others.
