Where there local cultural identity features in the architecture of restaurants in ‘Modern Lima’ (1) during the gastronomic Boom? (2) As a cultural event, we can talk about an ‘appellation of origin’ in restaurants. Despite the fact that Peruvian gastronomy has turned into an international reference, and has been widespread advertised and studied, formal expression in Lima´s restaurant architecture has not received the same attention. Some cultures, like the French, Chinese, Italian or Japanese –for example- have clear bonds between architecture and place of origin. Through which aspects is it possible to evaluate local cultural identity features in the formal expression of gastronomical architecture? It is possible to determine through the following aspects included in the ‘Material Form’ of the building: Type, Volume, Scale, Space, Surface, Light, Materials and Colour. Which relations are possible to find in the consolidation of a local cultural identity? This research aims to identify and describe relations between architecture (specifically gastronomical architecture) and identity (specifically local cultural identity) in ‘Modern Lima’ between 1990 and 2015; framed by international globalization, and within a specific local process: the ‘Peruvian Gastronomic Boom’.
