In this work were performed tests of differential separation by gravity of oils and real sample fats provided by commercial establishments in different parts of the city of Lima; and also synthetic wastewater, prepared in laboratory conditions; which were reated by a conventional design grease trap and an improved design that includes vertical internal plates alternating and overlapping. The operating flows of the units built on real scale, for the real samples, allowed to obtain yieds in the reduction of oils and grease for theoretical retention times of 10, 20 and 40 minutes of treatment in continuous flow conditions. On the other hand, regarding the treatment of synthetic wastewater, they were operated in conditions of intermittent flow and chemical emulsion of oils by detergents (simuling the real operating conditions of commercial establishments) for theoretical retention times of 10 and 20 minutes. The concentrations of oils and fats of the tributary and effluent were obtained by the method 1664 extractable material with n-hexane by extraction and gravimetry. The results of the treatment of the real samples, did not allow to reach important efficiencies due to the mechanical emulsion produced by the pump that drove the treatment units; However, the results of the synthetic wastewater treatment showed removal efficiencies of the AyG parameter of the order of 80%, and it was shown that the inclusion of screens improves the removal efficiency of AyG by 4% and that with times of retention greater than 20 minutes the VMA regulations of the AyG parameter for tributaries with concentrations between [600 to 900] mg / L are achieved.
