The objective of this thesis is to design a mechanical level to cool a production of 9,000 chickens/h inside a chiller in a continuous process that belongs to the cold chain of a poultry benefit plant in a poultry. The design seen in a global way, consists in cooling the chicken, which is without feathers, legs, neck or visors, in these conditions the chicken receives the denotation of “carcass“ or “channel“, from 38 ºC to 4 ºC in the center of the breast. For which, there will be an indirect cooling through ammonia which will cool the water to 0.5 ºC in a heat exchanger. For this purpose, the chicken is immersed in water, first, in a pre chiller in which, only have replacement water, then go through the chiller, where, apart from having replacement water will have a recirculation of water. The calculations start from the thermal analysis of the chicken carcasses and cooling water according to the provisions of the chiller, it also includes the calculation of the time required, then the networks will be designed in order to find the pressure losses, at this point will dimension the recirculation pump followed by the ammonia-water heat exchangers. To comply with sanitary regulations, the design of an on-site cleaning system (clean in place) is included to provide internal washing of equipment and pipes. The necessary equipment will be sized for this purpose. Finally, the economic investment of the facility will be compared with the current expenditure on the plant, with the aim of finding economic indicators to be considered by future entrepreneurs and engineers of the poultry sector.
