The research proposes to demonstrate that it is possible to prevent the oxidation in the fish glaze, by means of an extract of flavonoids. The general objective is to determine the antioxidant effect of the flavonoid extract from the peel of Citrus sinensis L (orange) in the glaze of frozen Engraulis ringens (anchovy). In the investigation, the anchovy was gutted and beheaded, then it was frozen with 200 mL of drinking water at -35 °C for 3 hours. Subsequently, 3 glazing times were proposed, adding 200 mL of flavonoid methanolic extract at 0.5, 1.0 and 2.0 % concentration (making a protection effect of the upper layer of the frozen block). Conclusion: The treatments LS02 (sample with ascorbic acid) and LS04 (sample with 1% flavonoid extract) presented the best chemical sensory and physical results
