This research is based on the research developed by the authors called: ‘Demand management process assessment in food supply chain: an empirical study in coffee supply chains from Peru’ [94] which allowed the development of an evaluation tool based on the literature review and expert judgment on the main processes of Demand Management in coffee Supply Chains. This study explored the existing literature on the topics of Demand Management in food and agribusiness Supply Chains, which would be the topics most related or linked to coffee and this study; however, we considered any other topic that would allow us to identify the current situation of the sector, which ranged from Coffee Supply Chains worldwide, Production and Consumption of coffee in the world, Fair trade, certifications, sustainability, Climate change and its consequences in the agricultural sector, cooperatives, pests in the sector, crop diversification, resilience and Risk Management in the sector. The result of the literature review provided us with information that allowed us to identify the main processes of Demand Management in Supply Chains and, together with expert judgment, to develop the maturity assessment model that would allow us to measure, analyze and understand the results of the assessment. This model is a framework that encompasses the main processes of Demand Management covering the strategic and operational levels in a coffee Supply Chain. In addition, a questionnaire was developed based on the established processes of the model, which allowed us to provide the results with which the maturity analysis was carried out. Thus, this study evaluated the level of maturity of Demand Management in the Supply Chains of the three main cooperative centers in Peru, which is made up of suppliers, research centers and institutes, farmers, intermediaries, national wholesalers, exporters and the final consumer; having these characteristics in common, and additionally factors linked to the areas of production and the main export destination countries, is how the cooperatives to be evaluated were chosen. The analysis of the data showed us that both, at the strategic and operational levels, the maturity in Demand Management of the evaluated Supply Chains still fails to cover all the relevant aspects of such management, i.e., there is a need to improve the strategies of both levels since one does not work without the other.
