This research characterized five residues of the Peruvian agribusiness by determining the proximal composition, content of total phenolic compounds, hydrophilic antioxidant capacity (DPPH, ABTS and FRAP) and lipophilic antioxidant capacity (DPPH and ABTS), antimicrobial and antifungal activity of avocado seed (Persea Americana Millar), grape pomace (Vitis vinífera), lucuma seed (Pouteria lucuma), mango peel (Mangifera indica L.) and cocoa pod (Theobroma cacao L.). Of the proximal characterization, the lucuma seed reported a higher protein content (6.59 %), while the cocoa pod presented a higher moisture content (80.94 %), crude fiber (26.89 %) and ash (7.14 %). In addition, mango peel obtained the highest fat content (4.89 %). The phenolic compound content of the five residues ranged from 4.38 to 56.81 mg equivalents of gallic acid (EAG)/g in lucuma seed and mango peel, respectively. Likewise, mango peel showed greater hydrophilic antioxidant capacity evaluated by the DPPH method (957.51 mol Trolox equivalents (TE)/g), FRAP (1667.23 mol TE/g) and ABTS (990.85 mol TE/g); however, avocado seed obtained the highest lipophilic antioxidant capacity evaluated by the DPPH method (17.68 mol TE/g) and ABTS (30.14 mol TE/g). In addition, these residues presented the lowest IC50-ABTS values (0.38 mg/mL and 0.74 mg/mL). On the other hand, grape pomace, cocoa pod and lucuma seed presented antimicrobial capacity against Staphylococcus aureus (ATCC25923) and Escherichia coli (ATCC25922); and lucuma seed showed antifungal capacity against the Penicillium digitatum strain. The results obtained show that the residues studied have compounds with functional potential and their valorization is important for their application in the research, development and innovation of functional foods and in the control of safety during the processing and preservation of food or other applications in industry.
