The present thesis “Evaluation of maturation and sensory characteristics in post-harvest of yellow variety (Opuntia ficus indica) under storage conditions in the San Cristóbal Village Center, Moquegua Región“, had the following objectives: To determine the physicochemical characteristics (° Brix, PH, acidity and IM maturity index) of the tuna harvested at different stages of maturity (2, 3 and 4); To evaluate the changes in storage conditions at temperatures of (10 and 20 °C), times of (0, 4, 8 and 12 days) of the different stages of maturity in the physico-chemical characteristics; To determine the sensorial characteristics (smell, color and acceptability) of tuna on the 12th day. The methodology for the first objective has been used descriptive statistics; For the second objective, a Complete Random Design with Factorial Arrangement of 3 x 2 x 4 and three replicates at 95 % was used and LSD Fisher test; For the third objective, non - parametric statistics were used using the Kruskal - Wallis test. The results were: the physicochemical characteristics of the harvest in stages 2, 3 and 4 obtained: ° Brix (10,87; 12,88; 13,03); PH (7,38, 7,37 , 7, 20); Acidity (0,09, 0.09, 0,08) and IM (123,86, 139,02, 164,60) the tuna under storage conditions there is sufficient evidence to conclude that the stages of harvest influence the characteristics Physicochemical characteristics of tuna being stage 2 different from stages 3 and 4; It was demonstrated that there is no significant statistical difference of the sensorial characteristics in the evaluated stages of harvest, maturation.
