The present research evaluated the influence of skim milk and clarification time on the sensorial profile and acceptability of the pure Quebranta variety. We used the central design composed of two factors centered on the faces for two variables with 11 samples to determine the Influence of the concentration of skim milk and the time of clarification on the sensorial profile and the optimal levels according to the acceptability of pure pisco. Likewise, the physicochemical characteristics of pisco of greater sensorial acceptability were determined according to the chromatographic analysis. In the determination of the influence on the sensory profile of pure pisco, for the descriptors in the nose, the descriptor fresh fruit, the empireumatic, the chemical, the acetic and alcoholized, at the level of significance of the 0.05 only the chemical descriptor was significant. For the descriptors in the mouth, only dry and astringent fruit were significant at the significance level of 0.05. According to the optimization, two treatments were optimal as S1 solution with 0.9% skim milk and clarification time of 52.3 hours and S2 solution with 0.1% skim milk and clarification time of 99.1 Hours, both have values of acceptability greater than 6 and close to 8, which in the hedonic scale of 9 points qualify as nice piscos. The physicochemical characterization of the optimized samples S1 and S2 presented similarities in the content of ethyl acetate 27 and 27.13 mg / 100 ml anhydrous alcohol; Propanol 18.64 to 18.78 mg / 100 ml anhydrous alcohol; • iso-butanol from 19.39 to 19.55 mg / 100 ml anhydrous alcohol and slight differences in iso-teramylic from 168.42 to 152.28 mg / 100 ml anhydrous alcohol.
