The general objective of this project was to apply improvements in logistics processes by applying the ABC Multicriteria methodology and the evaluation of suppliers to reduce operational costs in the Mar & Arena 1 cevichería in the city of Trujillo in the year 2022. First, an analysis was made to the problematic reality and the problem with the greatest economic impact on the company was determined, the high operating cost due to inadequate logistics management. Therefore, the causes of the problem were identified, which were the inadequate management of suppliers, distribution of supplies and the picking process in the company's warehouse. In the 5 months of data collection before the improvement implemented (April to August), a loss due to inadequate logistics management of 14084.14 soles was calculated; which was defined as 11,913.50 soles of loss of investment in stock, 1,613.46 soles of loss in supply cost since supplies had to be returned in poor condition to suppliers and 557.19 soles of loss for order preparation costs, due to delays in pick . The AHP (Analytical Hierarchy Process) methodology was used, defining as alternative 1, Six Sigma, alternative 2, Deming Cycle, alternative 3, Lean manufacturing; contrasting three criteria: First criterion, apply the supplier evaluation and selection methodology, defining formats with evaluation criteria to reduce supply costs and investment costs in stock; second criterion, redistribute the warehouse of inputs applying the ABC multicriteria methodology to reduce order preparation costs; The third criterion, implementation time and requirement of qualified personnel, was qualified with the multicriteria scale, resulting in alternative 1, 22% prioritization, alternative 2, 48% prioritization, and alternative 3, 30% prioritization; finally, alternative 2, the Deming Cycle, was concluded as the best option. As described, supplier management tools, ABC multicriteria distribution, picking process, picking verification sheet and layout were used for the redistribution of supplies in the warehouse. The application of the supplier evaluation and selection methodology generated a reduction in supply costs of 1,138.59 soles, with a variation of 16.41%, and a reduction in investment costs in stock of 4,229.02 soles, with a variation of 18.06%. Regarding the frequency of returns due to poor quality to the supplier, it was reduced to 0%, the aforementioned improvements were implemented, having the information collection period in the months of September and October, resulting in a reduction in operational costs of 5653.24 soles. , The redistribution of the supplies warehouse by applying the multi-criteria ABC methodology reduced the order preparation cost by 285.63 soles, a variation of 40.18%. The application of the ABC multicriteria methodology generated an increase in the level of order fulfillment to 100%, with a reduction of 914 minutes in picking time with a reduction of 40.18% and a reduction of 884 minutes in delay time, generating a considerable savings of 129.05%. A comparison was applied between before (pretest) and after (posttest) of operational costs and logistics management. It began with the normality test for the data before the improvement and after the improvement, with a quantity of 52 data, it was decided to use the Kolmogorov Smirnov normality test, it was obtained as a result, in the pretest to all the indicators of operational costs and logistics management, of “Not normal“ distribution, with respect to the indicators after the improvement applied (post test) to all indicators with “Not normal“ distribution, however it was obtained at the cost of provisioning a Normal distribution. We proceeded to evaluate the hypothesis test and calculate Cohen's D in order to determine the size of the effect; was obtained as a result of the Wilcoxon hypothesis test of the variables, statistically supporting the significance (p<0.05) of the implementation, with respect to the hypothesis “The application of an improvement in logistics processes allows reducing the costs of supplying inputs in the cevichería Mar & Arena 1 in the city of Trujillo in the year 2022“, resulted in a mean before the improvement of 131,060 with a standard deviation of 39,688, and a mean after the improvement of 111,532 with a standard deviation of 4,172; in addition, a P value of < 0.001, in which it was interpreted that the hypothesis is not rejected, revealing that the implementation has significance, in addition, it resulted in d with a value of 0.692, a medium effect size; for the hypothesis “The application of an improvement in the logistics processes allows to reduce the investment costs in stock in in the cevichería Mar & Arena 1 in the city of Trujillo in the year 2022“, resulted in a mean before the improvement of 438,806 with a standard deviation of 183,147, and a mean after the improvement of 368,963 with a standard deviation of 152,790; In addition, the P value was 0.040, less than 0.05, so the hypothesis is not rejected. Furthermore, it resulted in d with a value of 0.414, a small effect size; for the hypothesis “The application of an improvement in the logistics processes allows to reduce the costs of preparation of orders in the cevichería Mar & Arena 1 in the city of Trujillo in the year 2022“, gave as a result an average before the improvement of 13,347 with a standard deviation of 2.748, and a mean after improvement of 8.179 with a standard deviation of 1.239; In addition, a P value of < 0.001, being less than the 0.05 level of significance, accepting the hypothesis. furthermore, it resulted in d with a value of 2.425, a very large effect size. Finally, for the hypothesis “The application of an improvement in logistics processes allows reducing operational costs in the cevichería Mar & Arena 1 in the city of Trujillo in the year 2022“, resulted in an average before the improvement of 583,209 with a standard deviation of 173.857, and a mean after improvement of 488.675 with a standard deviation of 153.704; In addition, a P value of 0.007, being less than the significance level of 0.05, accepting the hypothesis. furthermore, it resulted in d with a value of 0.576, a medium effect size. for the parameters of the independent variable, in order to statistically support the significance of the implementation of the improvement in the logistics processes. For the parameter “Frequency of returns to the supplier“, an average of 0.115 was obtained before the implementation with a standard deviation of 0.323, and an average after the implementation of 0.000 and a standard deviation of 0.000; The p value was calculated with a result of 0.014 and a Cohen's d value of 0.506, determining that there is significance with a medium effect size. For the parameter “Level of picking compliance“, a mean of 0.948 was obtained before the implementation with a standard deviation of 0.070, and a mean after the implementation of 1,000 and a standard deviation of 0.000; The p value was calculated with a result of <0.001 and a Cohen's d value of 1.046, determining that there is significance with a large effect size. For the “Picking time“ parameter, a mean of 47,712 was obtained before implementation with a standard deviation of 8,792, and a mean after implementation of 26,173 and a standard deviation of 3,964; The p value was calculated with a result of <0.001 and a Cohen's d value of 2.425, determining that there is significance with a very large effect size. For the “Delay time“ parameter, a mean of 12,712 was obtained before the implementation with a standard deviation of 8,792, and a mean after the implementation of -3,827 and a standard deviation of 3,964; The p value was calculated with a result of <0.001 and a Cohen's d value of 2.425, determining that there is significance with a very large effect size.
